This vintage is made from 67% estate-grown grapes from the Palliser Vineyard and 33% from the Pencarrow Vineyard, both located in the heart of Martinborough, New Zealand.
The grapes are gently harvested and cold-settled for 48 hours before being racked and fermented in stainless steel tanks. A portion (10%) is barrel-fermented in seasoned oak, adding subtle complexity and richness. With 3.3g/L of residual sugar, this wine gains extra texture and weight, resulting in a refined, food-friendly white wine.
After fermentation, the Sauvignon Blanc spends 2 months on lees, enhancing its mouthfeel and depth. The result is a bone-dry white wine with a vibrant, musky-spicy palate and a crisp, enduring finish.
